Lively Libations: Summer Cocktail Guide

We’ve officially entered the lazy, hazy, crazy days of Summer and that means backyard bashes, campfire bonding, beachin’ and seeing your neighbours for the first time in 4 months. I’ve curated a Summer cocktail round-up that’s refreshing and light to help you keep cool on those sweltering Summer nights.

Mint Julep Lemonade

3 parts lemonade
1 part bourbon
1 part Sprite or soda water (optional)
Fresh mint leaves (as much or as little as you please), torn
→ in a tall glass with lots of ice, add mint leaves and pour lemonade, bourbon and Sprite, stir and enjoy

 There is something nostalgic about drinking a lemonade based cocktail. It reminds me of childhood days on the sidewalk selling cups of sugar from a makeshift stand for excessively more than they were worth. My entrepreneurial spirit started at a young age. This recipe is refreshing and it’s made with bourbon so it’s win-win.

Rum Punch

1 cup lime juice
2 cups grenadine
2 cups white rum
1 cup dark rum
2 cups pineapple juice
2 cups orange juice
→ combine all ingredients in a pitcher and chill before serving, garnish with orange slices and/or pineapple wedges

We only get a few months of balmy weather up here in Canada so it’s time to channel our inner tropics with this fruity concoction. We may be missing the palm trees but Maples can be pretty shady.

Watermelon Margaritas

½ cup sugar + ½ cup water + 3 large strips of orange zest, combined for simple syrup
2 cups of watermelon, cubed and frozen
¼ cup fresh lime juice
¾ cup tequila
→ combine ingredients for simple syrup in a sauce pan and bring to a boil. Reduce to a simmer and cook until sugar dissolves (approx. 3  minutes); set aside to cool
→ blend watermelon in a blender until smooth (strain through a fine sieve if desired) and pour into a pitcher
→ add lime juice, simple syrup and tequila and stir
→ pour in salt-rimmed glasses filled with ice

 I’m still in that weird phase in which I find myself incapable of grocery shopping for only 2 people so naturally I bought the biggest watermelon of the bunch and now have a ton leftover. The roommate froze it and suggested I make watermelon margaritas and it was then that I knew that I really had found the person I wanted to spend the rest of my life with.
